Desiccated on the vine?

Does anyone know what this means i know its got soomething to do with the oldway of makeing wine

Desiccated on the vine?
No, its still done.



The idea is to intensify the flavor and sugar content by reducing water content of the grape.



So they twist the stem of the bunch of grapes on the vine. This cuts off the flow of moisture from the vine, the grapes start to dry and shrivel, like raisins.



In some regions they pick the grapes then dry them, such as 'straw wine' (because they laid them on straw).



Other methods of reducing water content of grape is the ice-wine technique and noble rot.
